What is a double-baked croissant?
It’s a croissant that’s baked once, then we slice it in half and lightly soak it in a syrup flavoured with a bit of rum. Then we fill it with almond cream, close the top and spread another layer of almond cream so it doesn’t dry out in the oven. Sprinkle with sliced almonds and bake it for about 15 minutes until golden brown outside and just baked and moist inside.
What is almond cream made of?
It’s made with almond flour, eggs, icing sugar, butter, wheat flour and flavours like almond extract and rum.
